Tailgating equates good food! That’s a given. And tailgaters like to barbeque etc., and a lot of these recipes usually contain a good amount of salt. I have just been diagnosed with Meniere’s. For those of you who are not familiar with this, you usually experience some degree of hearing loss, have tinnitus (a ringing in your ears) and dizziness and vertigo. This is not life threatening, but it does reduce your quality of life somewhat until you learn how to manage it. One of the most important things you can do is reduce your salt intake. Now for most of us, that is a major challenge, because after researching and reading labels, there is salt in almost everything! We all need some salt in our diets, but most processed foods today have way more than necessary.

Now it occurs to me that I am certainly not the only one, tailgater or not, who deals with this. There are many chronic diseases like diabetes and heart disease that require lowering your salt intake. I thought my life was over when I found out I had to l eat less salt. Because I use a lot of salt on my food. But I have been exploring the web for information and happily found out that there are a lot of low salt products that are both tasty and healthy. I would like to share some of the products I found to be helpful.

No Salt Seasonings

There are many spices that are available that contain no salt. Here are a few I have tried. I always keep one salt free seasoning in my purse when I eat out.

o Nu-Salt Salt Substitute – This is put out by the same people who make Sweet and Low. It can be used both at the table and in cooking.
o Mrs. Dash Seasoning Blend – Mrs. Dash puts out a whole series of salt free seasonings. The ones I have tried are the Onion and Herb and the Table Blend. Both are very good. Contains no MSG.
o AlsoSalt Sodium Free Salt Substitute – This is sold at Tom Thumb stores in our area. You can also buy it online at alsosalt.com if it’s not available in your area. They have butter flavored too.
o Spike Gourmet Natural Seasoning – This one comes in several varieties. Tailgaters might want to try the Cajun and Grillin’.
o Bell’s All Natural Salt Free Seasoning – This one is great in egg salad and chicken dishes.

No Salt Sauces

Reading labels is a biggie too. Once you start, you will find there is salt in almost everything, so we get a lot more salt in our diet than we could ever imagine without adding it at the table. I personally was blown away with the amount of salt I was eating without even being aware of it.

Dining Out

When dining out, you can reduce the sodium content of a meal by trying these simple suggestions:

o Use pepper, lemon juice, or bring your own salt free seasoning for flavor.
o Go easy on condiments and sauces. Mustards, catsup, salad dressings, sauces and gravy substantially increase the amount of sodium in your meal
o Request that food is prepared without added salt and ask for sauces, salad dressing and gravy be served on the side
o Recognize words that indicate a high sodium content; marinated, pickled, smoked, au jus, teriyaki, soy sauce or in broth
o Keep it simple. Often special sauces and toppings add extra sodium to foods. Ordering a broiled cut of meat or fish is a better choice than entrees covered with special sauces. Plain meat-type sandwiches are lower in sodium than chicken, egg or tuna salad sandwiches.

There have been studies that implicate being overweight as leading to their depression, especially in women.

Some overweight individuals have low self esteem and self worth and use food to calm themselves in a vicious cycle.

Studies have not been able to prove one way or another that weight causes depression, or depression causes the weight gain. According to the Archives of General Psychiatry (2006), the depression and obesity link were equal for men and women.

Depression for some can increase their appetite. Depressed people do not have the energy to exercise. Being overweight or obese carries stigma and negative connotations leading to depression. In desperation people may tun to fad diets that promise to get the weight off quickly. Fad diets why are they bad is because they can contribute to depression.

Trying one diet after another (yoyo dieting) is bad for your system. You will be continuously disappointed because the weight will not stay off and this can lead to feelings of failure and depression.

If you believe your diet is connected to your depression, you can go to your doctor and have some blood tests to see what nutrients your body may be lacking. Your doctor can tell you if you need dietary supplements or not.

Dietary deficiencies are common in fad diets. Poor diets that some people eat regularly can contribute to depression. If you consider all the facts it seems like going on a proper diet would relieve your depression symptoms. Can a change in your diet lead to your depression cure?

A proper diet that would help you lose weight and keep the pounds off are what you need. There are many commercial diet plans out there to try, or you can simply count calories your self. Avoid diets that are less than 1200 calories or promise fast weight loss. Most people can lose weight on 1500 calore diet.

Om a 1500 calorie diet you will be able to feel satisfied. You can lose one to two pounds a week this way. It may take a little longer to lose the weight but it will be worth what you have learned about eating healthy, and the weight will stay off.

The dangers in fad diets involve fatigue, weakness, depression, dehydration and electrolyte imbalances. Vitamin deficiencies found in improper diets include deficient B vitamins, Vitamin C, Zinc and Tryptophan to name a few.

To conquer your diet deficiencies you may need to see a dietician. or simply go on a healthy diet. A healthy diet includes a balance of grains, dairy products, protein, fruit, vegetables and fats. The rising rates of HIV infection also are beginning to influence the number of new TB cases (TB is the most common opportunistic infection and the leading cause of death among AIDS patients). In addition, the country’s health systems suffered a setback during years of political, social, and economic transition. As a result, TB detection in Ukraine is based on an outdated screening technique—miniature chest x-rays instead of simpler, less expensive lab tests. Finally, infected individuals who do not get treated may pass the disease to others.

There ?s a need for accurate information to health care providers, patients, the public, and policy- and decision-makers. Ukra?n?an author?t?es need to onduct surveys and focus group discussions with these groups to help better understand their knowledge and attitudes ?n order to g?ve information they need.

USAID has Ukraine as one of ?ts top-priority countries in Europe for improved tuberculosis (TB) control. Ukraine’s estimated TB case rate of 106 cases per 100,000 population is the eighth highest in Europe and Eurasia. According to the World Health Organization’s (WHO’s) Global Tuberculosis Control Report 2008, Ukraine had an estimated 49,308 TB cases in 2006, an increase of 4.6 percent from the previous year. Of these, about 44 percent were cases of sputum smear-positive (SS+) TB.

In 2005, WHO called for redoubled efforts to scale up effective TB control using DOTS (directly observed treatment, short course) throughout the European region. In November 2005, the Ministry of Health (MOH) issued an order adopting DOTS as the basis for national TB control policy. The new National TB Control Program (NTCP) for 2007–2011 now supports rapid expansion of DOTS coverage, with the goal of moving from 29 percent in the USAID-supported pilot regions in 2007 to 100 percent by 2011. Although Ukraine currently reports 100 percent DOTS coverage, the quality of DOTS services requires significant improvement in many areas; at present, only approximately 50 percent of the population has access to quality DOTS.

Intensified measures are needed to contain Ukraine’s growing TB problem, which is exacerbated by increasing cases of multidrug-resistant (MDR) TB and one of the fastest-growing HIV epidemics in the world. According to WHO, nearly 16 percent of new TB patients have MDR-TB, the third highest proportion in the world. ¹ By the beginning of 2008, extensively drug-resistant (XDR) TB was also reported in Ukraine. Both TB and HIV are concentrated in the southern and eastern oblasts (provinces) of the country, and TB-HIV co-infection is a growing challenge. Results of surveillance in 2006 in Donetsk Oblast indicate that 16 percent of TB patients in the civil sector are co-infected with HIV. Among prisoners, nearly 24 percent of TB patients are co-infected. More than 60 percent of AIDS deaths are attributable to TB. While outdated practices still exist, recent policy changes indicate a growing government commitment to improved TB treatment standards and coordination with HIV services.

In the United States alone, there are 18.2 million people (6.3% of the population) living with diabetes. While another 13million people have been diagnosed with diabetes. Unfortunately, 5.2milion (or nearly one third) are unaware that they have the disease.

The figure for Nigeria is not readily available, but it is estimated that over 1.5million people have diabetes in Nigeria.

In developed countries, most patients of diabetes are over sixty, but in developing countries, diabetes is found to affect people in their prime.

WHAT IS DIABETES?

Diabetes Mellitus (or simply diabetes) is derived from the Greek word ‘Diabeinein’, meaning ‘To pass through’ describing copious urination, and Mellitus from the Latin word meaning ‘Sweetened with honey’. These two words signify sweetened urine or sugar in urine.

Diabetes is a disease in which the body does not produce or properly use Insulin. Insulin is a hormone that is needed, in the body, to control the rate at which sugar, starch and other food are converted into glucose required as energy for daily life. The hormone is produced and released into the blood by an organ called ‘Pancreas’. This insulin help to maintain the blood glucose level within a normal range. The World Health Organization (WHO) puts this normal range between 60 – 100mg/dl (Before taking any food for the day, hence this value is called Fasting Blood Glucose). In health, despite several demands for glucose in different situations, the blood glucose rarely exceeds this value.

After a meal the liver stores the glucose from the meal as glycogen and releases it into the blood in between meals. The role of insulin is the control of this storage and release of glucose. It ensures that the amount of glucose in the blood at every particular time does not go beyond or below the normal range.

TYPES OF DIABETES.

According to the World Health Organization (WHO), five classes of diabetes are recognized, these are; Insulin Dependent Diabetes Mellitus (IDDM) or Type I Diabetes, Non Insulin Dependent Diabetes Mellitus (NIDDM) or Type II Diabetes, Gestational Diabetes, Diabetes Insipidus and Bronze Diabetes.

INSULIN DEPENDENT/TYPE I DIABETES: This type of diabetes was initially called Juvenile onset diabetes because it affects adolescents and young adults. It is caused by a sudden failure of the pancreas to produce Insulin. It is, therefore, an acute disease, presenting with thirst, polyuria (passing large amount of urine), diuresis and weight loss. Type I diabetes is not common, it accounts for less than 10% of all diabetes cases.

NON-INSULIN DEPENDENT/ TYPE II DIABETES: This is the most prevalent type of diabetes, accounting for more than 80% of all diabetic cases. It is found in adults and the elderly. This type of diabetes develops gradually over a long period of time (unnoticed) and is characterized by insufficient insulin, deficient insulin in the blood or the inability of the body to utilize the insulin resent (Insulin resistance). Because of its slow and gradual occurrence, it is mostly undetected until one or more of its long-term complications appear.

Unlike in Type I Diabetes, the Insulin in the blood of a Type II diabetic may be normal or even high, but lacks the desired effect, due to insulin resistance, and this is prevalent among obese people.

GESTATIONAL DIABETES: This type of diabetes occurs during pregnancy and disappears after delivery, within 3weeks. An estimated 3% of all pregnancies are accompanied by gestational diabetes and almost half of these patients are prone to developing permanent diabetes later in life. WHAT CAUSES DIABETES.

As with hypertension and other non communicable diseases, no clear cut cause(s) can be attributed to the most prevalent type of diabetes (Type II Diabetes, Type I diabetes being secondary to failure of the pancreas). However, some factors are known to increase one’s chances of becoming diabetic and these are called risk factors. For example, indolent and well-fed populations are 2 – 20times more likely to develop type II diabetes than active and lean population of the same race. Some other factors known to increase one chances of getting diabetes include:

OBESITY: It is estimated that three quarter () of all Type II diabetes patient are obese. Indolent and affluent lifestyles tend to contribute to this. It is believed that a 10kg loss of weight can reduce fasting blood sugar level by almost 50md/dl. An active lifestyle with frequent exercise is also known to increase Insulin sensitivity.

The International standard for measuring overweight and obesity is based on a value called BODY MASS INDEX (BMI). This value is derived by dividing the body weight (in Kilograms) by the square of height (in metres).

* Lean good eating habits, such as;

* Cut down on fatty food and junks

* Eat more of fish and poultry (without the skin is better).

* Cut the number of eggs you take to 3- 4 weekly (better boiled than fried).

* Reduce salt intake to less than 5.8grams daily.

* Eat more of vegetables and fibre rich food, especially fruits.

* Finally, constantly monitor your fasting blood glucose, as this is the only way to know when you are getting into trouble.

There is no Vaccine

The H5N1 bird flu virus is a highly contagious deadly virusand is carried by birds and other animals. When contracted it often causes rapid and sudden death. So far over 400 people have contracted it and over 60 percent of them have died. It is spreading throughout Africa, Asia and Europe. On March 9, 2006, the U.S. Homeland Security Secretary Michael Chertoff estimated migratory birds could carry the avian flu virus through Canada and to U.S. shores within several months.

There is now a fear that the H1N1 virus, which spreads rapidly and easily, may combine with the highly leathal H5N1 bird flu virus, and mutate into a highly contagious and deadly pandemic flu.

The CDC activated its Emergency Operations Center to coordinate the agency’s response to this emerging health threat and on April 26th 2009 the Secretary of the Department Homeland Security, Janet Napolitano, declared a public health emergency in the United States.

Typical of a new virus, such as the H1N1 swine flu, there is virtually no immunity to it and no vaccine. The alarming part about the H5N1 avian flu is that it kills the majority of people that get it, including young healthy people with strong immune systems, whereas normal seasonal influenza causes only mild respiratory symptoms in most people.

When it hits it will sweep thru society like wildfire. It could become be the worst disaster known to man, causing millions of deaths worldwide, more than all the natural disasters and wars combined. Hospitals and health care professionals will be overwhelmed.

There is no way to stop it; everyone is at risk

“Bird flu, a human pandemic is unavoidable and will take place sooner or later”, stated Dr. David Nabarro, United Nations World Health Organization Coordinator for avian and human influenza. He estimated as many as 150 million potential deaths worldwide.

According to Dr. Nabarro: “Once a flu pandemic starts, everyone will be at risk of getting pandemic flu, because no one has natural immunity to the virus. However, certain groups may be at greater risk of dying than others. There are strong indications that the coming bird-flu pandemic may be similar to the influenza pandemic of 1918 and, if so, healthy adults would be most at risk of dying, along with pregnant women and the elderly.”  

Why are healthy adults at greatest risk?

Dr. Nabarro explains: “It appears that the H5N1 bird-flu virus causes a massive immunological response against the virus in those with the strongest immune systems.  Unfortunately, this causes the release of human enzymes called “cytokines,” which destroy lung cells along with viral particles.  This, in turn, causes a deadly outpouring of fluids into the lung, which interferes with the exchange of oxygen and carbon dioxide. This reaction is frequently fatal.”

“Let’s acknowledge the fact that for the first six months of any pandemic, we’re not going to have a vaccine,” Health and Human Services Secretary Mike Leavitt told The Associated Press. If they can make a vaccine, it is expected to be too little, too late, with no assurance it will work at all. At best, officials expect there would only be enough vaccine for 25 percent of the population. Health professionals and emergency response workers would get first priority.
